Put fish fillet in buttered dish. Season with all purpose season mix. Put in oven and cook until almost done. This step can be accomplished on the broiler with firm bodied fish such as sea bass.
When step 1 is complete, place on fish first a layer of ortega chili, a layer of cheddar cheese, a slice of tomato and a layer of jack cheese (in that order). Return to heat, either in salamander or oven until cheese melts. Serve with Lemon Wedges.
